Whenever people talk about green eating, eating “clean,” or the like, there’s nearly always a condemnation of food that comes in cans. This is a pity, because canning, as a technology, was world-changing. And, it can still be a big help with some of the most serious challenges we face today, from climate change, to food waste, to obesity, to health.
